Ingredients to make zucchini and eggplant omelette:
- 1 unit of Eggplant
- 2 units of Zucchini
- 1 unit of Onion
- 3 units of Eggs
- 3 units of egg whites
- 1 dash of olive oil
- 1 pinch of salt
How to make zucchini and eggplant omelette:
Step NO 1
First of all, to prepare this zucchini, eggplant and onion omelette we have to peel and chop the onion , then we will put it in a pan with a good jet of oil. We cook it over medium heat for a few minutes.
Step NO 2
While the onion is cooking we wash the tips of the eggplant and cut it into cubes , and we do the same with the zucchini but cut it into slices.
Step NO 3
Once we have cut all the ingredients of the vegetable omelette without potatoes, we will add them to the pan together with the onion.
Step NO 4
Let the vegetables cook , add a little salt and cover over medium heat until everything is poached.
Step NO 5
Once we have made the vegetables for the vegetable omelette , we take them out and drain the oil a little. In addition, in a bowl we put the eggs, the whites and a pinch of salt, and beat them well .

Mix the eggs with the poached vegetables , so the flavors will be much more integrated and the zucchini , eggplant and onion omelette will be more tasty.
Step NO 7
We put a pan with a little oil over medium heat, add the mixture of the aubergine and zucchini omelette, and let it cook slowly .
Step NO 8
We leave the vegetable omelette without potato to curdle for about 3 minutes on one side, then we turn it over and let it finish.
