Ingredients to make vegetarian Alicante Olleta:
- 1 onion
- 2 garlic cloves
- 300 grams of natural crushed tomato
- 2 leeks
- 1 turnip
- 200 grams of pumpkin
- 2 artichoke hearts
- 100 grams of spinach
- 200 grams of beans
- 150 grams of lentils
- 3 cups of brown rice (600 grams)
How to make vegetarian Alicante Olleta:
Step NO 1
To flavor the vegetarian pot, start with a simple stir-fry. In a saucepan, add two tablespoons of olive oil and brown 2 finely chopped garlic cloves over low heat to avoid burning and souring.
Step NO 2
Add the chopped onion and sauté for 5 minutes or until golden. After 5 minutes, add the crushed tomato to the saucepan and let it cook together for another 10 minutes. Turn off the heat and reserve the sauce.
Step NO 3
Soak the beans the night before to hydrate them. The next day, in a large pot, put the beans already hydrated, cover them with cold water and cook them for 20 minutes from the moment the water starts to boil.
Step NO 4
After 20 minutes, add the lentils , quartered artichoke hearts , diced turnip and sliced leeks . Cook for 15 more minutes to get a vegetarian Alicante pot with a lot of flavor.
Step NO 5
Add the pumpkin and spinach leaves and cook for 5 more minutes.
Step NO 6
At this point, add the sauce that you reserved previously to the pot and mix everything. Rectify with salt if necessary.
Tip: you can add aromatic herbs such as bay leaf to enhance the flavor of the vegetarian pot.

Finally, add the brown rice and a little more water to prevent the soup from drying out. Let it cook until the rice is cooked through.
Step NO 8
