- 4 units of Egg
- 3 beet leaves
- 4 spinach leaves
- 1 unit of Onion
- 2 dice of Garlic

- 1 unit of Red chili pepper
- 1 unit of Green Chili
- 1 unit of Chorizo (or 2 sausages)
- ¼ cup of milk (60 milliliters)
3 branches of fresh parsley
- 1 teaspoon cornstarch
- ½ teaspoon oregano
- 1 jet of Oil
- 1 pinch of salt
How to make vegetable omelette with chorizo:
Step NO 1
Wash vegetables and drain until excess water is removed. Then chop the onion, garlic, garlic joint, chili peppers, parsley, carrot and chorizo into very small portions and reserve them on a separate plate.
Step NO 2
Put a cup of water in a container to boil, when it starts to boil, remove it from the heat and add the beet leaves and spinach, cover it and wait 2 minutes. Then strain them and leave them to drain in the colander.

Dissolve the teaspoon of cornstarch in 3 tablespoons of water or broth.

Step NO 6
If necessary add 2 more tablespoons of oil, cover and bring to a simmer. When you notice that a little smoke comes out of the edges of the tortilla, place a flat plate on the pan and turn it over , placing the tortilla on the other side. With the help of the fork, pierce several times and when it gives off smoke again, turn off the heat.
Step NO 7
