These delicious egg and dairy- free omelets are very easy to cook, since you only need 3 base ingredients: chickpea flour, water and kala namak salt.
Chickpea flour is widely used in vegan gastronomy, because when mixed with water it acquires a texture similar to that of a beaten egg. The kala namak salt, having a peculiar sulfur flavor, will give the vegan French omelette with chickpea flour an even more authentic touch.

How to Make Vegan Chickpea Flour French Omelette:
Step NO 1
You have to start preparing this vegan chickpea flour French omelette by peeling the onion. Then we cut the onion and the pepper in julienne . We can use other vegetables, for example, mushrooms or spinach.
Step NO 2
Subsequently, we heat a frying pan greased with a little oil and roast the onion and pepper.
Step NO 3
In a bowl we add the chickpea flour and gradually pour the water while stirring until the egg-free French omelette mixture has the consistency of a beaten egg.
Tip: The amount of water indicated is approximate, you may need a little more.
Step NO 4
Add the roasted onion and pepper to the bowl with the chickpea flour mixture and stir well.
Step NO 5
We ladle portions of the French omelette with chickpea flour into a hot pan until it is no more than half a centimeter thick. Cook the omelette without an egg on one side until it is lightly browned, turn it over and cook on the other side. With this amount of dough, 4 small or 2 large vegan French omelettes come out.
Step NO 6
We serve the vegan French omelette with chickpea flour for breakfast or as a component of a main dish, or we can also fill them.
