Ingredients to make Uxmal Eggs:

  • 8 pieces of Tomato
  • 1 bunch of coriander

  • ½ piece of Onion
  • 2 garlic cloves
  • 1 teaspoon salt
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon of chicken bouillon powder
  • For the green sauce:
  • 10 pieces of Green Tomato
  • ½ piece of Onion
  • 2 garlic cloves
  • 1 bunch of Epazote
  • 1 teaspoon of chicken bouillon powder
  • 1 piece of Chile serrano
  • 1 teaspoon of white vinegar

How to make Uxmal Eggs:

Step NO 1

For the red sauce : cook the tomatoes with the onion, garlic and habanero pepper in a little water.

Step NO 2

Tomatoes are peeled and blended with a quarter cup of the water where they were cooked together with the coriander, vinegar, chicken consommé and salt to taste. In a frying pan with a drizzle of oil already hot over low heat, fry the red sauce that was blended and leave it for five minutes to boil without a cover to thicken it.
