Ingredients to make traditional Sacromonte omelette:
- 6 eggs
- 1 glass of white wine
- 1 bay leaf
- 1 bone of veal marrow
- 1 tablespoon olive oil
- 150 grs. lamb criadillas
- 100 grs. lamb brains
How to make traditional Sacromonte omelette:
Step NO 1
The criadillas and brains are cleaned and blanched. After this operation you can finish cleaning them well.
Step NO 2
Then, in a saucepan with the wine, the bay leaves and salt. When the water boils, add the brains and the triadillas and boil for 5 minutes. They are taken out of the water and set aside.
Step NO 3
In order to obtain the marrow from the veal bone, it is boiled in a saucepan with water and salt. Once boiled, remove the marrow and reserve.
Step NO 4
When the brains and criadillas are cold, they are cut into small pieces.
Step NO 5
The eggs are beaten and mixed with the brains, criadillas and marrow.
Step NO 6
The tortilla curdles normally, leaving it a bit slimy.
