How to make Tortilla de Grelos with mushrooms:
Step NO 1
Once the turnip tops have been washed, this time also better without stems, blanch them in boiling salted water for 2 minutes, turn off and remove to a colander.

They can be steamed for 5 minutes, although in this case the salted water helps to remove some of the bitterness.
Step NO 3
We will put in a pan 2 tablespoons of olive oil, and we will sauté the thawed mushrooms.

When the sauté looks like this, about 5 minutes, we will add the onion in julienne. Then 2gr of salt and that pinch of bicarbonate.

You can add a couple of tablespoons of water to speed up the bicarbonate process if the onion does not release it. We will keep the heat medium.

You will see that after a few minutes, the onion takes color quickly thanks to this technique and of course an innate sweetness, without extra sugars.
Step NO 7
When the onion has darkened enough, about 20 minutes, it is not a matter of leaving it dark brown, we will add the turnip greens and stir until the water they bring with them disappears. We will raise the fire for this purpose.
Step NO 8
When this happens we will add the chopped prawns, we will give the whole a turn and we will turn off. We will reserve, the mixture has to temper.
Step NO 9
Once it is tempered, we will beat the eggs with salt and pepper (the latter optional).

And we will add the filling to the egg, stir well and taste the salt again, so that it is not bland.
Step NO eleven
Now we will put a little oil in the pan, we will shake it to distribute it well over the entire surface, and we will add it.
