Sweet potato and oatmeal pancakes can be synonymous with healthy and nutritious breakfasts depending on ingredients you use when cooking them. In this case, we are going to make a recipe for sweet potato pancakes (or sweet potato) using sweet potato puree, oatmeal, egg and cinnamon, that is, without milk and without sugar … what do you think?
Well, I assure you, they are delicious and thanks to the sweet potatoes, these sweet potato pancakes do not need any added sweetener, although you can always serve them with a little honey or maple syrup on top as I have done. Try them with Free Recipes!
Ingredients to make Sweet Potato Pancakes:
- 4 tablespoons of sweet potato, sweet potato or sweet potato puree (about 100 gr)
- 6 tablespoons of oatmeal
- 2 eggs
- 1 dessert spoon of chia seeds (optional)
- 1 dessert spoon of ground cinnamon
- 1 dessert spoon of baking powder or baking powder
- Mild oil (coconut or sunflower)
How to make Sweet Potato Pancakes:
Step NO 1
Start by mixing the sweet potato puree with egg . You can do it both manually and in mixer. To make homemade puree, you just have to roast sweet potatoes in oven or in microwave, or boil them, and remove skin to mash and puree them.
Tip: If you prefer, you can use only egg whites to prepare the sweet potato pancakes and what more fitness.
Step NO 2
Add the dry ingredients to previous preparation: oatmeal, cinnamon, baking powder and, if desired, chia seeds as well. Mix very well to break up lumps in oatmeal.
Tip: If you want, you can crush oat flakes to make them flour in case you can’t find it already made.
Step NO 3
Heat a non-stick pan greased with a little coconut oil over medium-low heat , and pour a portion of batter from the sweet potato and oatmeal pancakes (you can use amount that goes into a ladle as a reference). Wait 1 minute and turn pancake on other side to brown as well. Wait 30 seconds and remove. Repeat this step until dough is gone.
Step NO 4
Serve freshly made sweet potato crepes with a little honey and sliced banana, or with another type of fruit and syrup for example.
