Ingredients to make Spanish omelette without onion:
- Potatoes / potatoes / cachelos
- Oil for frying
- Paprika (paprika)
- Olive oil
- Salt and pepper to taste
How to make Spanish omelette without onion:
Step NO 1
Wash, peel and cut the potatoes / potatoes / cachelos into thin flakes. Dry well with a paper towel. Do not soak in cold water, since in this case it is a question of making the potatoes / potatoes / cachelos soft (“chewy”) and not crispy.
Step NO 2
Heat the oil for frying in a large frying pan over the fire and add the potatoes previously cut very carefully to avoid splashing. Cover the pan for the same purpose. Let it cook until they are cooked but not browned.
Step NO 3
Remove the potatoes / potatoes / cachelos from the heat, drain and reserve.
Step NO 4
Beat the eggs seasoning with salt and pepper. Add the potatoes / potatoes / cachelos already cooked.
Step NO 5
Return the pan to the fire (this time using the same oil but in less quantity). Lower the heat and add the beaten eggs with the potatoes / potatoes / cachelos.
Step NO 6
Flip the tortilla over using a flat plate or a flat, smooth pan lid very carefully to cook the other side.
Step NO 7
Place in a bowl sprinkling with the Spanish paprika / paprika and adding a subtle drizzle of olive oil.
Step NO 8
It can be served hot or cold, with a bit of fried or roasted chorizo, chistorras or inside a baguette bread in the form of a sandwich.
