Ingredients to make Shrimp Prawn Omelette:
- 2 tablespoons oil
- 2 garlic cloves, minced very finely
- The white part of 2 chopped lemongrass stalks
- 2 finely chopped coriander roots
- 2 teaspoons red chilli, minced
- Half a kilo of small and peeled fresh prawns
- 3 chives, chopped
- ½ teaspoon black pepper
- 1 tablespoon fish sauce
- 2 teaspoons of brown sugar
- 4 eggs
- 2 tablespoons of water
- 2 more teaspoons fish sauce
- More julienned chives for garnish
- Cilantro sprigs for garnish
- Chilli sauce for serving
How to make Shrimp Prawn Omelette:
Step NO 1
Heat half the oil in a saucepan and sauté the garlic, chilli, coriander roots and lemongrass over medium heat for 20 seconds.
Step NO 2
Add the prawns and sauté until it takes on another color.
Step NO 3
Add the pepper, onion, tablespoon of fish sauce and sugar; stir well and remove from saucepan.
Step NO 4
Beat the eggs, together with the water and the 2 teaspoons of the fish sauce until foamy.
Step NO 5
Pour the remaining oil in the saucepan and when it is hot, add the beaten eggs, so that they set.
Step NO 6
Lift the curdled edges and let the raw egg run underneath. Repeat this operation until the omelette is completely curdled.
Step NO 7
Put ¾ of the shrimp mixture in the center of the tortilla and fold the sides into a square shape.
Step NO 8
Place the omelette in a bowl and top with the rest of the prawn mixture.
Step NO 9
Garnish with chives cut in julienne and with the coriander serve with chilli sauce and cooked rice It can also be prepared with a combination of seafood, such as prawns and scallops
