As for the history of shambar, it is long, but we highlight that this dish is originally from La Libertad, then it migrated and became the flagship dish of the province of Trujillo.
It was the main food of the workers, and that is why it is customary to find it in all Trujillo restaurants, specifically on Mondays. It is believed that being a nutritious dish is a good way to start the week with a lot of energy.

Ingredients to make Shambar Recipe :
- 180 grams of cooked wheat
- 180 grams of cooked chickpea
- 150 grams of cooked zarandaja
- 150 grams of bay bean
- 100 grams of peeled beans
- 400 grams of pork belly
- 3 tablespoons achiote oil
- 1 tablespoon yellow chili paste
- 2 tablespoons of aji panca paste
- 1 tablespoon garlic paste
- 1 pinch of cumin
- 1 pinch of black pepper
- 250 grams of smoked pork rib
- 1 branch of coriander
- 1 branch of mint
- 1 medium red onion
How to make Shambar Recipe :
Step NO 1
To start with this easy shambar recipe, it is important to soak all the beans, chickpeas, silage, wheat and beans 24 hours beforehand ). Over time, cook the legumes in a medium saucepan with water until they are cooked. Strain and reserve in different containers.
Step NO 2
In the event that you do not have achiote oil, it is important to cook with great care. In a medium frying pan add a splash of oil over medium heat and add a little achiote seed and turn off. Strain and reserve the oil.
Step NO 3
Cut the bacon into medium pieces and the red onion into small squares for the dressing.
Step NO 4
In a medium saucepan add a dash of achiote oil, approximately 3 tablespoons. When it is hot, add the red onion and cook until it is transparent.
Tip: add a pinch of salt to make it dehydrate faster.
Step NO 5
Add the garlic paste, the ají amarillo and the ají panca . Stir with the help of a spoon for approximately 3-4 minutes.
Step NO 6
Add a pinch of oregano, ground black pepper, and cumin . Cook for about 2 minutes.
Step NO 7
In a large pot, place the pork pieces and add 1 liter of water . Let cook for about 30 minutes, once the time has passed, remove the pork pieces and the mint branch.
Step NO 8
Also add the beans and the peeled beans . The Peruvian shambar recipe is almost here!
Step NO 9
Stir with a spoon and add the pork ribs and dressing . Add water or pork stock until covered and cook over medium heat for approximately 30 minutes, you must stir occasionally to prevent the ingredients from sticking.
Step NO 10
While the soup is cooking, in a tall pot add a splash of vegetable oil and cook the pork rind with the previously boiled pork belly and reserve.
Step NO eleven
Once the time is up, add salt and serve with canchita serrana or with pork rinds. Garnish with chopped parsley. Ready to Eat !
