Easy to make Scrambled potatoes recipe

From the blog Lo Que Come Luis we bring an easy and inexpensive recipe , it is a potato scramble with country flavor. a very healthy dish as it consists of green and red peppers, onion and carrot, to which we add egg on top. This recipe is ideal both for breakfast and as a garnish.

Ingredients to make Scrambled potatoes:

  • 4 units of Potatoes
  • 1 unit of Red pepper
  • 2 units of Green pepper
  • 1 unit of Onion
  • 3 units of Carrots
  • 3 units of Eggs

How to make Scrambled potatoes:

Step NO 1

We start by washing our hands very well, put on the kitchen hat and to the mess. Prepare all the vegetables , for this, wash, peel and julienne the potatoes. Do the same with the rest of the ingredients and cut the size you want them to have in the scramble.

Step NO 2

Heat a frying pan with oil over low heat to start cooking the potatoes. The skillet should be a large size to fit all the vegetables.

Step NO 3

After the first few minutes, add the carrot and continue simmering for 5 more minutes.

Step NO 4

Next, add the peppers along with the onion to the pan . We leave it for another 5 minutes until they are done. Sauté the veggies from time to time.

Step NO 5

While everything is being done in the pan, we beat the eggs together with a pinch of salt. Then, when we see that the vegetables are already done, we add this to the pan and stir everything well.
