How to make Carne con chile colorado:
Step NO 1
To start, place the beef in the boiling water, along with the diced potatoes. Add a pinch of salt, the bay leaves, a piece of onion and two cloves of garlic. Once the meat is cooked, remove it from the water and let it cool. Shred it and reserve it next to the potato.
Step NO 2
Meanwhile, in a little hot water place the guajillo peppers , letting them rest until they soften. When they are soft, open them, remove the veins and seeds.

Once the chiles are ready, put them in the blender or processor along with the garlic, cumin, oregano and a pinch of salt. Also add the rest of the onion and a little water. Blend until you get a homogeneous mixture , strain it and set it aside.

On the other hand, heat the butter in a saucepan so that it melts. When it is liquid, add the flour and keep stirring until you get a light brown mixture.

Add the strained guajillo sauce to the butter and flour mixture. Integrate the ingredients, add the rest of the water and stir constantly. Check the seasoning and, if necessary, add a pinch more salt.

Finally, add the shredded meat and the diced potatoes, let the ingredients integrate for 10 more minutes and stirring constantly.
