Ingredients to make Red Chilaquiles:
- 6 pieces of Corn tortilla
- 4 pieces of Egg
- 250 grams of asadero cheese
- 1 cup of vegetable oil
- 3 pieces of Chile pasilla
- 500 grams of Tomato
- 100 grams of Onion
- ¼ tablespoon of ground black pepper
- 1 clove garlic
- 1 dessert spoon of coriander seed
- 1 dessert spoon of powdered chicken broth
- ¼ dessert spoon of ground oregano
- ½ dessert spoon of ground marjoram
- ½ dessert spoon of thyme
- 1 dessert spoon of Vinegar
- 1 pinch of salt
- 1 pinch of oregano
How to make Red Chilaquiles:
Step NO 1
First thing we have to do before preparing the chilaquiles is to list all the ingredients that we are going to use.
Step NO 2
To make the chilaquiles, the onion is washed and cut into quarters, the trunks, seeds and veins of the chili peppers are removed. Finally, the tomatoes are washed and we roast everything, turning constantly. You have to be especially careful with the chilies, because if they burn they will make the sauce bitter. When everything is well roasted, it is removed from the heat.
Step NO 3
The tomatoes , onion and chili peppers are blended with a quarter cup of water, a teaspoon of vinegar, the powdered chicken broth and the rest of the spices. There should be a thick sauce .
Step NO 4
In a saucepan with a tablespoon of vegetable oil already hot over medium heat, pour the red sauce that was blended and let it boil for 5 minutes without a lid. After that time it is removed from the fire and emptied into a container.

To make the chips , the tortillas are cut into medium triangles . In the same pan where the sauce was fried, add half a cup of oil and heat over medium heat, when it is hot, fry the pieces of tortilla without stopping moving, add a pinch of salt and pepper. When they are fried they drain well. Remember that you can make the corn tortillas yourself or buy them already made.
Step NO 6
Apart in a hot pan over medium heat, add a tablespoon of oil and fry the eggs one by one , taking care not to break the yolk. Season with a pinch of salt and oregano and reserve.
Step NO 7
Heat the red sauce if it has cooled down and gently add the fried corn chips.
Step NO 8
