Omelette is a classic of Spanish cuisine . We can make it with a lot of ingredients and it is most likely that we will always succeed, because there are few who resist a piece (or skewer, as it is called in some cities) of tortilla. In Guruwalik I share my version of the omelette with green and red peppers that, in addition to making it delicious, give it a beautiful color.
Preparing it is not complicated, you just have to have a good non-stick pan, arm yourself with patience to curdle it and turn it over so it does not burn.

- 2 Italian green peppers
- 1 large or two medium red bell peppers
- 6 eggs
- 1 splash of extra virgin olive oil
- 1 pinch of salt
How to make an easy-to-make Red and Green Pepper Omelette:
Step NO 1
We wash and dry the peppers very well. We cut the tail and remove the seeds from the inside. We can cut them into strips or slices, whichever you like best or make it easier for you!
Step NO 2
We fry the peppers in a pan with hot olive oil. We stir from time to time until they are fried to taste.
Step No 3
We take the peppers out of the pan , put them in a colander to release the oil that they have been able to soak up and wait a little while to be able to continue with the red and green pepper omelette recipe.
Step No 4
We break four eggs and put them in a large bowl. We beat them with the help of a fork and add the peppers. Mix well and add eggs until the peppers are covered in beaten egg.
Tip: Depending on the size of your peppers and the size of the eggs you have at home, you may need more or less than what I needed.
Step NO 5
Add salt , mix again and reserve. In a non-stick frying pan we put a few drops of olive oil and put it on the fire. When it is hot we pour the mixture and stir from time to time to make sure that the tortilla with red and green peppers does not stick.
Step NO 6
When it is done on one side, with the help of a plate we turn it over and dump it back into the pan on the raw side.
Step NO 7
Once it is done on both sides, we lower the intensity of the fire so that it curdles on the inside without burning on the outside. We may have to turn the tortilla several more times so that it does not burn excessively on one side.

Step NO 8
When we press in the center and no liquid egg comes out, it will be curdled, and we can eat!
