- 2 eggs
- 400 ml milk
- 25g butter
- 25 g of icing sugar
How to make the best pancakes with syrup:
In a saucepan we put the sugar with the lemon and put on the fire, stirring constantly until making caramel, that is, until it is golden brown.
Separately, we will have the water in a measuring glass, we will put the casserole aside and add the water little by little.
Be careful because they can splatter the caramel and they are one of the worst burns in a kitchen. We stir over the fire until the caramel, which has hardened, becomes liquid again.
To finish, we strain the syrup in case there is a piece of caramel and we reserve.
For the pancakes: In a bowl, lightly beat the eggs with the sugar and a third of the milk. Then we add the flour and mix.
Add the rest of the milk together with the melted butter, the yeast and the vanilla essence and mix well.
Finally we strain with a Chinese in case there were any lumps of flour.
On a griddle greased with a little butter we are putting portions of dough, a couple of minutes on each side and serve.
