Recipe for Scrambled eggs with asparagus and mushrooms

Ingredients to make Scrambled eggs with asparagus and mushrooms

  • 4 units of Egg
  • 1 bunch of green asparagus
  • 250 grams of mushrooms
  • 1 clove garlic
  • ½ Chives
  • 1 pinch of salt
  • 1 pinch of ground black pepper
  • 150 grams of Peas
  • 1 dash of olive oil

How to make Scrambled eggs with asparagus and mushrooms :

Step  NO 1

First of all, we gather all ingredients to prepare this scrambled eggs with asparagus and mushrooms.

Step NO 2

To start, we make a sauce for our pea scramble. To do this, we put a little oil in a pan and add a peeled garlic clove and half a chive cut into squares. Let vegetables brown for 3 or 4 minutes over medium heat.

Tip: In our case, we remove garlic at end of sauce, before adding eggs.

Step  NO 3

We wash, cut and sauté asparagus in pan, along with sauce. Season with salt and pepper and let them cook for 4 minutes. Did you know that asparagus is a fantastic diuretic? Do not forget to introduce them in your day to day.

Step  NO 4

If we use frozen peas, we pass them through water beforehand so that they lose cold and we drain them. We add peas along with rest of vegetables and sauté them for 2 or 3 minutes. Peas are a natural source of iron, highly recommended for people with anemia.

Step NO 5

We wash and cut mushrooms into not too thin slices and add them to vegetable scramble. Since mushrooms release a lot of water when cooked, it is better to set heat high so that water evaporates and vegetables do not cook. If there is excess water we can remove it.

Let all vegetables cook for 3 more minutes and add salt and pepper if necessary.

Step  NO 6

To finish with this scrambled with mushrooms and asparagus, add eggs and stir well with a wooden spoon until scrambled eggs are textured and cooked .

Step  NO 7
