Ingredients to make Motuleños Eggs a la Yucateca:
- 4 pieces of Egg
- 8 pieces of Corn Tortilla
- ½ piece of white onion
- 1 clove garlic
- 5 pieces of red tomato
- 1½ cups of refried black beans
- 1½ cups of turkey ham
- 1 cup of pea cooked
- 1 cup of grated cheese
- 1 piece of Banana male
- ½ cup of Oil
- 1 pinch of Pepper
How to make Huevos Motuleños a la Yucateca:

Step NO 2
To begin we must cook the red tomatoes for the sauce: for this we place the red tomatoes together with the garlic and onion in a saucepan with enough boiling water, and let them cook for 10 minutes over high heat.
Step NO 3
Meanwhile, on the other hand, we take the plantain, cut it into thin slices approximately 3 cm wide and fry them in a pan with the previously heated oil. Once the banana slices are fried , we remove them from the heat and reserve them for a moment.

Now we take our corn tortillas and in the same way we take them to fry in the oil. As we do not want them to roast completely, we only leave them in the hot oil for 1 minute on each side . Once ready, we remove them from the oil and reserve them for a little while.

Returning to the red tomatoes, once cooked we place them together with the garlic and onion in the blender, and proceed to blend until obtaining a homogeneous sauce for the Yucatecan Motuleño eggs .

Once our sauce is formed, we pour it into a saucepan with a little oil, let it cool for 5 minutes and add a pinch of salt and pepper.

Now we take the eggs and one by one we cook them in the form of a fried / fried egg in the same oil where we fry the corn tortilla and the plantains.

Now we take the refried black beans and put a bed of beans as the base of the dish where we are going to serve the Motuleños eggs from the Yucatecan.
