This recipe is one of my favorite, and very simple, summer recipes. It’s so easy to make and you can use it for a variety of dishes. The secret ingredient is paprika. This recipe is easy to make, can be prepared in advance, and it’s perfect for grilling or frying.
Lately I’ve been making a lot of jackets for my eggs. The other day I made two large quenelles and a .25-pounder. I used fresh tomatoes and a little extra paprika. Ingredients for making Tomato-jacketed eggs with paprika:
- 4 large tomatoes
- 4 hard-boiled eggs
- 4 slices of bacon
- 300 gr. of rice
- 50 gr. of butter
- Paprika to taste
How to make jacketed eggs in tomato paprika:
Step NO 1
Prepare a white rice and half cooked it is sprinkled with plenty of paprika. Meanwhile, the upper part of the tomatoes is removed and the pulp is extracted, taking care not to break them.
Step NO 2
They are seasoned with salt and pepper and a small ball of butter is placed in the bottom of each tomato.
Step NO 3
The eggs are cooked, the shell is removed and each one is wrapped with a slice of bacon, then introduced into the tomatoes.
Step NO 4
Put the white rice in an ovenproof dish and place the stuffed tomatoes on top.
Step NO 5
