Ingredients to make Ranchera Eggs:
- 1 pound of Tomatoes
- 2 güeros peppers
- ½ onion
- 1 clove garlic
- 1 pinch of Salt and Pepper
- 3 tablespoons of Oil
- 6 corn tortillas
- 6 Eggs
- Parsley or Chives
How to make Ranchera Eggs:
Step NO 1
The first step in order to enjoy our Huevos Rancheros will be to make the tomato sauce . To do this, put all the vegetables to roast on a griddle or over the fire, until they begin to scorch. In this step we work with the tomatoes, onion, chilies and garlic.
Step NO 2
When you have it, mash everything to taste. If you want your eggs to the ranchera with a fine and homogeneous sauce you can use the blender to grind everything, but if you prefer to feel the pieces, you can chop everything by hand or with an all-purpose chopper.
Return this to a skillet and heat to season with salt and pepper to taste.
Step NO 3

Step NO 4
Add one more splash of oil back into the pan and cook the fried eggs . Although not very common, Huevos Rancheros can also be made with scrambled eggs. And if you want a slightly lighter dish, remember that you can make fried eggs without oil .
