It is a dish with a base of potatoes, garlic and paprika that is accompanied by a topping of meats, usually torreznos or fresh bacon bacon. Ingredients to make Potatoes revolconas or meneás:
- 3 large potatoes
- 2 cloves of garlic
- 1 glass of olive oil
- 2 tablespoons of paprika de la vera or sweet
- 2 tablespoons of salt
- 1 bay leaf
- 1 pinch of ground black pepper
- 1 liter of water
- 1 fillet of bacon with a thickness of two centimeters
How to make stir-fry potatoes:
Step NO 1
To start with this recipe for mashed potatoes, put a pot to cook with water, peel the potatoes and the garlic cloves .
Step NO 2
When the water starts to boil, add the potatoes cut into quarters, the chopped garlic cloves, the bay leaf and the salt. Part of this salt is reserved to add to the fresh bacon if needed. Cook for half an hour . Cut the fresh bacon into thick strips.
Tip: check if the potato is cooked by pricking it.
Step NO 3
In a clay pot, pour a good stream of olive oil and, once hot, sauté the bacon, stirring often . After about four minutes, the bacon will be ready to be removed and reserved. Turn off the heat in the casserole and continue with your scrambled potato recipe.
Trick: give it that point of salt that fresh bacon needs.
Step NO 4
In the same oil in which the bacon was fried, pour the paprika and ground pepper with the fire off to prevent the paprika from burning. Stir for a minute so that the oil is tempered with the paprika.
Step NO 5
Once the potatoes are fully cooked, remove them with a kitchen utensil that drains them when removing them and reserve their water to lighten the dish if you need or like it.
Put the potatoes and garlic in the clay pot with the oil with paprika and bring to a low heat while you mash the potatoes together with the garlic, we opted to leave the potatoes scrambled half crushed and, thus, achieve a more solid texture.
Step NO 6
Remove from the heat after three minutes of exposure and add a good jet of water from the cooking of the meneás potatoes, this gives the dish more softness and lightness.
Serve the tumbled potatoes with the bacon pieces on top and some fine whole grain toasts to accompany. Enjoy!
