- 1 kilogram of potatoes (white, Peruvian)
- 1 medium red onion
- 150 grams of fresh cheese
- 1 squirt of vegetable oil
- 1 tablespoon minced garlic
- 3 tablespoons of ground yellow pepper
- 1 pinch of toothpick
- 2 sprigs of fresh parsley
- ½ cup evaporated milk
How to make Ajiaco de papa:
Step NO 1
Do you wonder how the potato ajiaco is prepared? Well, to start you must cut the red onion into fine squares and reserve.
Step NO 2
With the help of a peeler, remove the skin from the potato and cut it into small squares . Reserve in water to avoid oxidation.

Cut the fresh cheese into small cubes and reserve in the refrigerator.

In a medium saucepan over medium heat, sauté the onion and garlic with a splash of vegetable oil.
Tip: add a pinch of salt.

When the onion is transparent, add the yellow chili paste and a pinch of toothpick . Cook for about 4 minutes.

Add the potato to the pot and stir with the help of a spoon . Also add 2 cups of chicken broth or water and salt and pepper. Cover and cook over low heat.
Tip: move constantly to prevent it from sticking to the bottom.

When the potato is cooked, remove the pot from the heat. Add the fresh cheese and a splash of evaporated milk . Move constantly.
