Step NO 1

Step NO 2
Cut the potatoes into cubes of the thickness you want. There is no established rule for this step, as each cook cuts the potatoes according to their tastes. If you prefer, you can cut them into thin slices or make irregular cuts with a knife.

Take a nonstick skillet and heat plenty of oil. When hot, fry the potatoes over medium heat until soft but not brown. If you have used very large potatoes and your skillet does not have enough capacity to fry them all at once, do it in two batches.

When you see that the potatoes are ready, remove them from the pan with a slotted spoon and reserve them in a bowl with absorbent paper or a wringer to remove excess oil. Besides, beat the eggs with salt to taste. If you want a consistent and very curdled omelette, you should beat the eggs until they foam. Once the excess oil is removed from the potatoes, transfer them to a large bowl. Add the beaten egg and, if necessary, a pinch more of salt. Mix and heat a non-stick pan with a little oil (about two tablespoons). Ideally, to get a good Spanish omelette, the pan should be between 20 and 26 cm in diameter.

When the oil is hot, add the potatoes mixed with the egg to the pan and distribute the mixture making gentle circular movements with the pan. Let cook over medium heat until you see that the tortilla begins to bubble.

Turn the tortilla with the help of a flat plate a little smaller than the pan. Ideally, the plate should just cover the tortilla, but you can also use a flat lid or a larger plate.

Cook the potato omelette on the other side. You can give it several turns if you wish, everything will depend on the degree of consistency you want the omelette to acquire. If you want it to be more curd, turn it several times, if you prefer an undercooked omelette, a couple of turns will be enough.
