Ingredients to make omelette with mushrooms:
- 16 eggs
- 1 tablespoon fresh cream
- 100 gr. of butter
- 500 gr. of small mushrooms
- 1 bunch of parsley
- 2 cloves of garlic
- Salt
- Pepper

How to make omelette with mushrooms:
Step NO 1
Clean the mushrooms well, separate the heads from the trunks, cut the first in julienne strips and the second in cubes. Put in the pan 50 gr. butter and when it begins to take color, add the mushrooms. Let them brown well.
Step NO 2
Peel the garlic, wash the parsley and chop it finely chopped, season the mushrooms and sprinkle with the garlic and parsley. After 3 or 4 minutes, remove the pan from the heat.

Step NO 3
Crack the eggs, season and beat them, add the mushrooms, 20 gr. butter cut into small pieces and a tablespoon of cream. Mix well. Put the rest of the butter in the pan and when it starts to turn golden, curdle the omelette. Serve very hot.
