Ingredients to make Mató Cheese:
- 1 liter of whole milk
- half a cup (of coffee) vinegar
- 5 walnuts
- 5 hazelnuts
How to make Mató Cheese:
Step NO 1

Step NO 2
The milk is heated until it boils, then it is removed from the heat and allowed to cool down to 70ºC (which is more or less when a layer of fat appears on top of the milk and when you put your finger it does not burn excessively.
Step NO 3
Next we pour the vinegar little by little until the milk is cut (it has to take on the appearance of sour milk, with lumps), then we put it in the fridge until it cools.
Step NO 4
After half an hour or so it is removed, drained, and left to rest in a strainer to release all the water for about 1 hour, stirring it from time to time with a spoon.
Step NO 5
When it is completely drained we put it in some of those clay pots for desserts, we cover it with honey to sweeten it and we add the chopped nuts.
Step NO 6
You have to add vinegar until the milk is cut, but be careful not to make it too vinegar and that we have a strong flavor.
