- 3 tablespoons of oil
- Hot water
- 2 large potatoes
- 1 red chorizo
- 1 red bell pepper, diced

How to make Lentil stew:
Step NO 1
Cut the red chorizo into slices and each slice into quarters. Place them in a pot with water over medium heat until it boils for 10 or 15 minutes, so they defat. Drain the water and reserve the chorizo.

Cut the bacon into cubes . First, brown the bacon in a pot over high heat. When it releases its fat, add the red chorizo that you had defatted. Once both ingredients are browned, remove and reserve.
Step NO 3
Cut the meat into cubes and add it to the pot with the cooking bottom left over from the bacon and the chorizo. Turn the meat to seal it on all sides. Then remove it and reserve it.
Step NO 4
Put the chopped onions and green onions in the saucepan, along with the diced red pepper. Add a teaspoon of salt. Stir until the onion is transparent .
Step NO 5
Add the diced tomatoes. Stir all the vegetables for about 3 minutes .
Step NO 6
Once the vegetables are soft, place the three meats that you had reserved: the bacon, the meat and the red chorizo . Stir everything very well.
Tip: When you add the meat, you can add half a glass of wine and wait for the alcohol to evaporate.
Step NO 7
Then, place the potatoes cut into cubes . Stir well until everything is integrated. Add the seasonings, salt, pepper, and chili pepper and stir well.
Step NO 8
Add the lentils , previously soaked. Stir well.
Tip: It is recommended that you soak the lentils for approximately 3 hours before using them.
Step No 9
Add hot water until all the ingredients are covered and add 2 or 3 bay leaves, stir. Put the lid on the pot and let it cook over medium heat .
From time to time, stir the preparation of the easy lentil stew and, if necessary, add more hot water so as not to cut the cooking.
Tip: Don’t overdo it with the water. You always have to cover the ingredients of the stew, but not too much.
Step NO 10
When you see that everything is cooked, turn off the heat and cover the pot . It is ideal that you let this traditional lentil stew rest for a few hours so that the flavors are more concentrated and it is tastier.
