Ingredients to make homemade Seitan:
- 250 grams of pure gluten
- 250 milliliters of natural water
- 2 vegetable broth tablets or homemade broth
- 70 milliliters of liquid soy
- 2 liters of water (to boil)
How to make homemade Seitan:
Step NO 1
Prepare a large bowl so that you can prepare the dough more comfortably. Use the same measure of water as gluten, that is, one bowl of gluten for one of water.
Step NO 2
Make a mixture with the water and the gluten flour . Stir with a wooden spoon until both are integrated and begin to knead. It does not need more than 3 minutes of kneading, you will see that it begins to acquire a sponge appearance.
Step NO 3
Cover the dough bowl with plastic wrap and let the dough rest for 20 minutes.
Step NO 4
Meanwhile, bring water to a boil and add the vegetable stock tablets and the soybeans .
Tip: It will not be necessary to add salt, since the bouillon tablets and the soybeans already have them.

Remove the plastic wrap and grab the dough with your hands. Squeeze it into a ball, it must have acquired a very chewy, smooth and elastic texture. Dip the seitan mass into the boiling water .
Step NO 6
Cover the pot and let the seitan cook for an hour without lowering the heat. At this point, it will acquire the flavor of the vegetable broth and soybeans. When ready, turn off the heat and let it sit until it cools completely.
Tip: If you prepare the homemade seitan at night, you can let it rest until the next day.
