Easy to make Homemade brown rice pancakes recipe

These homemade brown rice pancakes are a quick and easy entree to make. It is a recipe for use, since you can take advantage of the rice that was left over from the day before. We are going to serve the leftover rice cakes with a mushroom and onion sauté and chickpea hummus , but you can choose whatever filling you like best. Being a recipe for vegan rice cakes, we will use chickpea flour to replace the egg.

Ingredients to make homemade brown rice pancakes:

  • For the filling:
  • 10 units of Mushrooms
  • 1 unit of Onion
  • 1 bunch of arugula
  • ½ cup Chickpea Hummus
  • 1 teaspoon of sesame seeds
  • 1 tablespoon vegetable oil

For the mass:

  • 2 cups of cooked brown rice
  • 2 tablespoons of wheat flour
  • 3 tablespoons chickpea flour
  • ½ teaspoon of Salt
  • ½ teaspoon Garlic powder
  • ½ teaspoon of Onion powder
  • 3 tablespoons vegetable oil

How to make homemade brown rice pancakes:

Step NO 1

In a small bowl, put the chickpea flour and add several tablespoons of water, beating with a fork until the mixture reaches the consistency of a beaten egg. Being a recipe for vegan rice cakes , in this way we will substitute the egg.

Step NO 2

In a bowl, mix the rice, flour, salt, garlic and onion powder and the chickpea flour mixture. Stir well and flatten the dough a little with a fork.

Trick: If the rice is a little overcooked, the brown rice pancake batter will be better.

Heat a frying pan with oil. Take portions of rice dough, make some balls with your hands and squish them until you get a round homemade rice cake . We fry the pancakes on both sides until golden brown.

Slice the mushrooms and cut the onion into julienne strips. Sauté the vegetables until soft.

Top each leftover rice cake with several arugula leaves, onion and several slices of mushrooms, a teaspoon of hummus, and sprinkle with sesame seeds.
