  • 5 eggs
  • 1 white onion
  • 1½ cups olive oil
  • 1 pinch of salt
  • 1 pinch of pepper

How to make fried yucca omelette:

Step  NO 1

Peel yuca and cut it into three pieces. Prepare a pot with water, wait for it to boil and add yucca. Cook until yuca is smooth but still firm. That is, you can puncture it easily without losing its firmness.

Step  NO 2

Drain yucca, cut it into thin slices and reserve. Julienne onion and add it to yucca slices. Mix both and salt and pepper.

In same pan where you cooked vegetables, now cook yuca omelette . Use leftover oil and put heat on medium-low, cover. After 5-10 minutes, place a large plate on skillet and flip quickly. Use a spatula to flip yuca tortilla again and cook for a few more minutes. Turn off heat and flip it back onto plate.
