Ingredients to make Emmental cheese Soufflé:

  • 100 grams of Emmental or Gruyere Cheese grated
  • 40 grams of Butter
  • 40 grams of Flour
  • 250 milliliters of milk
  • 3 egg yolks
  • 5 Egg whites
  • Bread crumbs
  • Salt
  • Peppercorns

How to make Emmental Cheese Souffle:

Step NO 1

First step in making this delicious Emmental cheese souffle is to make a bechamel sauce : to do this, we melt the butter over low heat in a pan and add the flour. We toast it for about 2 minutes so that it does not remain raw without stopping stirring and then we add the milk. We integrate well with the rods and without stopping beating we cook the béchamel for another 10 minutes over low heat. Once we have the thick and homogeneous sauce , add salt and pepper and let it cool.

Next, we preheat the oven to 210ºC , grease the molds where we are going to make the cheese soufflés and also line them with the breadcrumbs so that they can be easily removed afterwards once cooked.

Tip: You can also use a single larger pan to make a baking tray-type cheese souffle.

Step NO  3

Next, on the one hand, we mount the whites to the point of snow and, when the bechamel is cold, we mix it with the egg yolks.

Then we mix the béchamel and the yolks with the whites .

Then we add the grated cheese to the béchamel mixture with the whites, and stir well with enveloping movements so as not to lose volume until all the ingredients of the Emmental cheese souffle are integrated and thus achieve a homogeneous mixture.

Step NO 6

Now we fill the greased molds with the cheese souffle mixture and sprinkle a little freshly ground pepper on top.

Step NO 7

Finally, we bake the cheese soufflés by placing them in the lower part of the oven for about 18 minutes without opening the oven, otherwise they will not rise. Once it has puffed up and browned on the top, our Emmental cheese souffle is ready to eat.
