Ingredients to make Eggs with light nopales:

  • 3 pieces of Egg white
  • 100 grams of Nopales
  • 50 grams of Tomato
  • 30 grams of Onion
  • 2 garlic cloves
  • 1 teaspoon of baking soda
  • 1 pinch of oregano
  • 1 pinch of salt and pepper
  • 1 liter of water
  • 1 teaspoon of olive oil

How to make Eggs with light nopales:

Step NO 1

Before preparing this light dinner , we prepare and wash all the ingredients that we are going to use.

Step NO 2

The first step is to blanch the nopales in order to cut off the slime, so our eggs with nopales will taste much better. We start by chopping the nopales into cubes and in a saucepan with half a liter of cold water we dissolve half a teaspoon of baking soda. Add the nopales to the saucepan with water and turn on the fire.

Bring to a boil , once the nopales release foam, let it boil for two minutes and strain.

We return the nopales to the saucepan along with another half liter of cold water and half a teaspoon of bicarbonate. We repeat the bleaching process and reserve.

Apart finely chop the garlic, onion and tomato.

In a pan with olive oil already hot over medium heat, sauté the garlic and onion , then add the chopped tomato and the blanched nopales. Season with a pinch of oregano, salt and pepper.
