Ingredients to make a typical Polenta Omelette:
- 1 onion
- polenta cup
- Sesame seeds, crushed
- 2 and a half liters of water
- 2 cloves of garlic
- 1 egg
- Oil
- Parsley
- Thyme
- Salt
Typical Polenta Omelette
How to make a typical Polenta Omelette:
Step NO 1
Cut the onion into half moons and carve the garlic.
Step NO 2
Sauté with a few drops of oil, add a pinch of salt and thyme (it is a typical Mediterranean herb or seasoning but we can use another seasoning if we can’t find it).
Step NO 3
Add the polenta to the same paella pan and stir well.
Step NO 4
Pour in the water and cook for 10 to 15 minutes without stopping stirring. Go testing as some polentas may need up to 30 minutes to cook.

Step NO 5
Let cool and mold the polenta into an omelette shape.
Step NO 6
We will add the beaten egg.
Step NO 7
Brush a paella or frying pan with oil and put the polenta (well spread with the egg).
Step NO 8
Turn and turn until well browned on both sides.
Step NO 9
Serve with the crushed sesame and the chopped parsley.

It is also very tasty with Millet and you can add pumpkin or sunflower seeds (seeds) that will give a crisp point and enhance the flavor.
