How to make chicken chow fan:
Cook the rice in plenty of water. When it is cooked, let it rest and mix it every so often so that it does not stick. Reserve and continue with the other chicken chow fan ingredients . Tip: The ratio you should use is half a kilo of rice for every liter of water. Cut the 2 chicken breasts into very small cubes.
Place a drizzle of oil in a saucepan or wok. When it is hot, place the chicken cubes and stir them so that they are sealed on all sides. Once sealed, add about 50 cc of soy sauce, a teaspoon of sugar, a little ground white pepper, and a teaspoon of ginger. Stir and cook for 15 minutes . Remove the chicken and place it in a bowl. In the wok where you cooked the chicken, and with the remaining cooking background, add a drizzle of oil, let it heat, and add all the finely chopped vegetables : onion, green onion, carrot and red pepper. Sauté and add 1 tablespoon of sugar. Stir and continue sautéing until the vegetables are just slightly browned .
Remove and reserve in the same source where you placed the chicken.
Put oil back in the wok (you shouldn’t wash it between steps). Lightly beat the eggs in a bowl and salt them to your liking. Add them to the hot wok and stir well with a wooden spoon . When both the white and the yolk begin to dry, remove them from the wok. Reservation.In this way, you already have all the ingredients of the chicken chow fan cooked separately. Now, in the clean wok and on high heat, pour a splash of oil and sauté the rice in it . Then add the eggs, vegetables, and chicken on top and stir.
Serve the chicken and vegetable chow fan on a plate , add soy sauce to taste and a little olive oil. Enjoy!
