Ingredients to make Beans with partridge:

  • 2 farmed partridges
  • 1 package of farm beans (haricot)
  • 2 leeks
  • 1 red onion
  • 5 cloves of garlic
  • 3 bay leaves
  • 3 cloves
  • 1 dessert spoon of sweet paprika, ground rosemary
  • 1 dessert spoon of salt or to the point, ground chili, or pepper
  • 1 small glass of apple cider vinegar and virgin olive oil

How to make beans with partridge:

Step NO 1

After soaking the farm beans for 24 hours, place them in a deep saucepan with enough water to cover them at least three fingers above them.

Add the whole peeled tomato , the garlic cloves with the skin and without peeling. Also add the leeks and, before adding the peeled red onion, prick the cloves into it.

Trick: We drive the nails into the onion to prevent them from spreading and it will be difficult for you to find them later.

Step NO 2

Leave the pot covered and cook for an hour over low heat . Cut the partridges in half and pour oil into a clay pot to fry them until golden brown. Don’t add any salt yet or the partridge meat will harden.

Step NO 3

After the beans are cooked, remove all the vegetables except the garlic. Don’t forget to also remove the cloves from the purple onion. Put the vegetables in a chopping glass and mash until they are pureed . The beans should continue to cook.

Step NO 4

In the same casserole where you brown the partridge, sauté bay leaf, paprika and ground chili pepper , stir and do not have it for more than a few seconds over low heat. You can add some other spice or spicy dressing if you wish.

Step NO 5

Then pour in the sauce that you have beaten as a puree and sauté for three minutes, stirring . This sauce that is formed is going to be one of the important parts of this partridge dish with beans, as it will help it to take on an unmistakable flavor.

Step NO 6

Add this sauce mixture to the pot where the beans are boiling. Stir and let them continue to simmer . It is important to be patient, as this type of beans takes time to cook, even more so if you cook them in a normal pot over low heat as was done in the past.

Step NO 7

Next, add a small glass of apple cider vinegar or some mild vinegar, and add the salt to the point. Be careful when adding salt , because when the flavors are concentrated, the broth takes more strength and can be very salty.

Step NO 8

Turn up the heat and let it come to a boil more quickly. At this time, you can also add ground rosemary, or substitute it for sama or some similar herb.

Cover and cook for an hour over low heat and your dish will be finished, although if you let it rest overnight this stew will be much more delicious.

Tip: The beans with partridge can be stored frozen in a container and have a complete dish for a day when you do not have time to cook

Step NO 9

Serve the beans with partridge to the table and accompany them with a tender sprout salad. These spoon dishes are very complete and the truth is that they need little more to accompany them, but we leave that to you. Enjoy your meal!
