Ingredients to make Bean stew with cod:
- 4 pieces of desalted cod
- 350 grams of dried beans
- 1 onion
- 2 garlic cloves
- 1 piece of green pepper
- 1 dessert spoon of sweet paprika
- 1 jet of oil
- 1 pinch of salt
- 2 tablespoons flour
- 3 tablespoons of crushed tomato
- 1 bunch of Swiss chard
How to make Bean stew with cod:
Step NO 1
Soak the beans the day before for a minimum of 8-12 hours.
Step NO 2
Desalinate the pieces of cod by soaking them for 48 hours and changing the water every 8 hours. You can also make the recipe for beans with cod already desalted and frozen to the point of salt. Put a few tablespoons of flour on a plate, dry the pieces of cod, pass them through the flour and fry them over high heat for one minute on each side.
Step NO 3
Peel and chop the onion and garlic cloves, wash the pepper and cut it into small pieces. Heat a casserole with a jet of oil, sauté the finely chopped onion, add the green pepper , poach it and add the minced garlic cloves . Before the garlic is browned, add the crushed tomato . Cook everything together for a few minutes. Add the teaspoon of sweet paprika, stir and mix.

Add the beans and cover everything with cold water. Let cook until it starts to boil, lower the heat a little and continue cooking. During cooking, add a glass of cold water. This is done to “scare” the beans and prevent the beans from breaking and peeling. Repeat this one more time. Also add a little salt, but not much because then you have to add the cod.
Step NO 5
Wash the chard leaves and, when the beans are half done, add them to the casserole and let them cook until they are cooked. If you prefer, you can make the beans with cod and spinach.

Once you have the cooked bean soup, add the cod pieces and let it cook together for 5 minutes. Taste test in case salt is needed and rectify.
