Easy to make Baked Fish Omelette Recipe

Ingredients to make baked fish omelette:

  • 2 onions
  • 1 tomato
  • 200 grams of pumpkin or white potato
  • 1 red or bell pepper
  • 1 leek (garlic porro) chopped
  • 4 white fish fillets
  • 5 eggs
  • 1 pinch of salt (to taste)
  • 1 pinch of pepper (to taste)
  • 1 squirt of olive or canola oil

How to make Baked Fish Omelette:

Step NO 1

Use a baking tray (preferably non-stick) and grease surface with oil. Bake chopped vegetables until golden brown, about 30 minutes. When you remove tray from oven, allow vegetables to cool to room temperature.

Tip: You can also add a drizzle of olive oil over vegetables, if you prefer.

Step  NO 2

Use a bowl to pour eggs . Add salt and pepper to mixture and stir lightly with a fork to beat them together.

Step  NO 3

Add precooked vegetables to beaten egg mixture and mix until all ingredients are integrated to proceed to cook fish omelette in oven.

Step  NO 4

Pour mixture into a greased mold and place fish fillets on surface. Remember to wash fillets beforehand and season them with parsley, garlic, a dash of lemon, pepper and salt. Bake fish omelette at 180ºC or 200ºC for 20 minutes. Remember that temperature also depends on each oven. You will know that recipe is ready when you see that eggs are well set.

Tip: Preheat oven 10 minutes before introducing preparation and grease mold.
